Pomegranate Soy Ginger Dressing
INGREDIENTS
Juice from 2 pomegranates, or 1/2 cup pomegranate juice
¼ cup balsamic vinegar
2 tablespoons honey
1 tablespoon soy sauce
1 tablespoon fresh ginger, grated
¼ cup vegetable oil ½ teaspoon salt
INSTRUCTIONS
Mix all of the dressing ingredients with a whisk or in a blender. Serve with your favourite salad.
Pome granate syrup
INGREDIENTS
Juice from 4 to 6 pomegranates, or 2 cups pomegranate juice
1 cup sugar
INSTRUCTIONS
Combine juice and one cup of sugar in a small saucepan; bring to a boil. Reduce heat and simmer about 20 minutes until reduced to one cup, stirring frequently. Remove from heat and cool. Store in a tightly closed jar or container in the refrigerator for up to two months.
POMEGRANATE HONEY VINAIGRETTE
INGREDIENTS
Juice from 2-3 pomegranates, or 1 cup pomegranate juice
4 tablespoons red wine vinegar
4 tablespoons honey
4 teaspoons Dijon mustard
4 teaspoons chopped fresh thyme or 1/2 teaspoon dried thyme
1 teaspoon fresh tarragon or 1/2 teaspoon dried tarragon
INSTRUCTIONS
Mix all ingredients in a blender or shake all dressing ingredients. Serve with your favourite salad.
